Ok. So I'm feeling the need to defend my chocolate cake yet again(the chocolate cake I made in Ecuador for a team member's 16th b-day...poor guy). Here it is, with Hunter as the model! Apparently, so I was told this evening, "it was perfect...from a distance(10-14ft)!" OUCH! That hurts, boys(and you know who you are...meanies!). Well, not really, but I must defend myself.
When looking through a cookbook I was given called "cooking in the andes" our missionaries wife pointed out to me that this chocolate cake was wonderful and that her family ate it on a regular basis. Even her son(who was our translator at the time) told me that someone in his house makes that cake weekly!!! I mean, come on, it had to be fool proof...right? WRONG!!
This was the worst chocolate cake I've ever eaten(or made). Hmmm...am I really defending myself here?!
So here's what I'm gonna do...I'm going to post the recipe for this cake and beg - no - plead with one of you loyal readers to make this cake and tell me how it turns out!! Yes, I know, its from a book for the andes, however, it does give sea level changes(there are none! Apparently its supposed to taste good everywhere!).
Chocolate Cake
Yield: 9x13 inch cake
3 1/2 cups flour
2/3 cup cocoa
1 1/2 cups sugar
2 teaspoons baking soda
1 teaspoon salt
1 cup oil
2 teaspoons vanilla
2 teaspoons vinegar
2 1/2 cups boiling water
Sift together dry ingredients. In separate bowl combine the oil, vanilla, vinegar and boiling water; mix well. Add this liquid to the dry ingredients; beat just to a mix. Oil and flour the cake pan(can use 9x13 in pan, two round pans or cupcake papers). Pour in batter. Drop pan on counter top twice to remove air pockets. Bake at 350 degreesF(175Celcius) for 25 minutes or until toothpick comes out just moist. Cover cake with kitchen towel and let cool. Frost with chocolate icing.
Sea level: no changes
Will somebody...anybody...try this out for me and see how it goes? Maybe I'll even do it if I can get to a store for the ingredients. This seriously was the worst cake ever...and I'm sure I'll never live to hear the end of it!

I believe you that it was. . and i ain't gonna try to make a yucky cake on purpose!!!!
That's just the thing! I don't know if the cake is yucky or if I just didn't do it right and its supposed to be good!!
And Dave, I know, vinegar in a cake sounds nasty - but they told me its supposed to be a moist, chocolatey cake!!! lol!
Wow it must have been the vineger! Lol! And NO WAY am I trying that recipe out!
